Roasted Broccoli, Garlic and Parmesan



Autumn is well and truly upon us! Rejoice and pull out the roasting pans! Tis' the season for warm, comforting and delicious wholefood. I mean really- who can resist roasted cheese... on literally anything...


Have you seen the Broccoli lately! It is simply gorgeous, loaded with nutrients and on special this week! Forget steaming broccoli- warm up the oven, slice up some chilli and garlic, grate some cheese and you are most of the way to giving this super simple dish a try.



What You Need:

  • 2 broccoli heads

  • 1/3-1/2 Cup parmesan, finely grated

  • 2 cloves garlic, thinly sliced

  • 1-2 Tbsp olive oil

  • 1/4 tsp dried chilli flakes or diced chilli

  • salt and pepper to taste

  • 1 lemon, cut into slices (to serve- optional)


What To Do:


  1. Heat oven to 220 degrees. Thinly slice half the Chilli into rounds. Toss chilli slices, garlic and broccolini with the olive oil on a rimmed baking sheet. Season with salt and pepper, making sure everything is evenly coated, especially the broccoli tips so they become crisp.

  2. Sprinkle with Parmesan and roast until the broccoli is bright green, starting to char and the cheese is golden brown, 10 to 15 minutes.

  3. Remove from the oven, serve as is- or with a squeeze of lemon.
