Rainbow Veggie Wraps


This gorgeous wrap is even tastier than it is colourful! Light yet satisfying, this veggie- loaded lunch favourite combines basil, hummus and feta for more flavour than you can shake a carrot at! Pack them in a lunch box or serve them up fresh. A cool, refreshing, and nutritious way to get a few serves of veggies into your day!


What you need:


(Makes 4 wraps)


  • 4 wraps

  • 1/3 cup hummus or you can use store-bought

  • 1 avocado mashed

  • 2 carrots, grated

  • 2 tomatoes, sliced thinly

  • ½ cup baby basil leaves

  • ½ cup sprouts (e.g. alfalfa)

  • 1 cup baby spinach

  • 100 g Danish feta, crumbled


Method:


  1. Spread the hummus and avocado evenly on the wraps. Fill with all the other fillings. Wrap and save for lunchtime or enjoy straight away.
