This gorgeous wrap is even tastier than it is colourful! Light yet satisfying, this veggie- loaded lunch favourite combines basil, hummus and feta for more flavour than you can shake a carrot at! What you need:
(Makes 4 wraps)
4 wraps
1/3 cup hummus or you can use store-bought
1 avocado mashed
2 carrots, grated
2 tomatoes, sliced thinly
½ cup baby basil leaves
½ cup sprouts (e.g. alfalfa)
1 cup baby spinach
100 g Danish feta, crumbled
Method:
Spread the hummus and avocado evenly on the wraps. Fill with all the other fillings. Wrap and save for lunchtime or enjoy straight away.
