Tropical Fruit Salad with Lychee and Coconut

Rejoice! Rejoice! Summer fruit is here! Isn't a joy to be spoilt for choice with all of the "fancy" fruit currently available? For this gorgeous, simple and tasty salad, a collection of tropical fruit is best for this recipe. We used:

1 small pineapple

2 mangos

1 dragon fruit

1 cup lychees (fresh or canned)

1 starfruit

1 small papaya

For the dressing:

400 ml (1 can) of coconut cream

Juice of 1 lemon

1 tbs runny honey

½ tsp cinnamon

½ tsp cardamom

Mint leaves to stir in and garnish at the end


Remove the skin from your fruit and cut the fruity flesh into medium sized cubes.

Mix all the dressing ingredients together.

Toss the fruit, dressing and a handful of the mint leaves together. Garnish with more mint leaves.
