Spiced Baked Apples


Ok, so lockdown baking is a thing. Are you looking for a more-ish dessert that has less carbs? Don't have time to make piecrust but still want an indulgent treat? Go right to the source with these spiced baked apples- all the good stuff in a bowl. Throw a little yoghurt and honey on top and you have a decadent tasting desert that- while not perfect- is "more" healthy than others. Yes please!


Perfect for afternoon snack, dessert, and any leftovers- can be put into your morning yoghurt, museli, pancakes, cereal, over ice cream... or even- just eaten straight up by themselves!



What you need:


  • 6 pink ladies, or any other crisp apple, roughly cubed.

  • 1/4 cup brown sugar

  • Juice of 1 lemon

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 60g cold butter, cubed

  • Greek yogurt and honey to serve


Method:


  1. Preheat the oven to 180 deg C. Grease a baking dish and set aside.

  2. Combine the apples, sugar, lemon juice and spices in a large bowl. Mix til apples are evenly coated then transfer to the baking dish.

  3. Flatten the apples evenly and scatter the butter cubes over the top.

  4. Cover with foil and bake for about 40 minutes or until tender.

  5. Remove from oven and give the apples a stir before serving.

  6. Serve with Greek yogurt and a drizzle of honey if you like.
