Quick Yet Fancy Pear and Goat’s Cheese Tart    

My husband is Spanish. He was the first to introduce me to the delectable sweet and savoury combinations of cheese with quince and rockmelon with jamon.  I don’t know where I was living before that!  Obviously under a rock.

Sweet and salty combinations tickle our tastebuds in a wonderful way.  Add in a flaky buttery puff pastry crust, and all of our comfort food desires are met!

This recipe hits all of these notes and makes a perfect appetizer or dessert in cooler weather.  The best thing about this super easy recipe is how fancy and impressive it looks– the best type of dish for entertaining! Simple yet Fancy!

What you need:

1 sheet of puff pastry

1 egg beaten with 1 tbs of water (this is your egg wash)

150 g goats cheese at room temperature

150 g cream cheese at room temperature

1 tbs honey, and extra for drizzling if desired

1 tsp fresh thyme, and extra for garnishing if desired

2 ripe pears (any type), thinly sliced

Method:

  1. Preheat the oven to 200 degrees C.  Line a baking tray with paper.

  2. Roll out the pastry with a rolling pin. Fold in the edges and press down with a fork for a fancy pattern.  Brush with  egg wash and pop onto the baking tray.  Pop back into the fridge for 5-10 minutes.  (tip: make sure your pastry stays cold, as cold puff pastry puffs up more).  

  3. Mix the cheeses, honey and thyme in a bowl with a spatula.

  4. Spread the cheese mixture evenly on the pastry, avoiding the edges.

  5. Arrange the pears over the cheese mixture.

  6. Bake for 15-20 minutes or until golden brown.

Remove from oven and drizzle with extra honey and thyme before serving.
