No-Waste Holiday Rocky Road

I know I know- who has "leftover" chocolate right! BUT- if you have all kinds of leftover nuts, dried fruits and some chocolate after having a few friends over- why not make them into something new! Rocky Road is the BEST for using up yummy morsels. You can literally make it out of anything as long as you have some chocolate to hold it together.

Having people over and looking for healthier snacks? Have you seen the ahhhmazing range of our pantry goods supplied by the visionaries at The Wholefoods Refillery? They have Dried Fruits, Nuts, Spices, Nut Butters, Grains, Pastas, Rice Snacks, and even Artisan Soaps (the sustainable packaging is cute too!). Order some of their lovely yummy treats- and should there be any leftovers- let us all eat Rocky Road! The amounts can vary based on what you have leftover- the main thing- have enough chocolate to stick it together.

What You Need:

  • 1 cup of assorted nuts, dried fruit, sweet biscuits/cookies, other sweet treats, dried coconut, dried edible flowers, M&M's, etc... Cut any large pieces into smaller slices

  • 1/2- 1 cup marshmallows- cut up or not!

  • 1 cup of chocolate of choice

  • Pretty edible things to sprinkle on the top

What to Do:

  1. Prepare your setting container with wax paper. A loaf pan or similar works well (honestly you could even use a muffin tins).

  2. Mix all your goodies in a bowl.

  3. Melt your chocolate either by the double boiler method (bowl over a pot of boiling water) or in the microwave.

  4. Mix together and carefully place into your setting container... if you aren't careful...you could end up with chocolate all over your fingers- and have to lick it off!

  5. Let set in the fridge for at least 2 hours before serving.

Enjoy your holiday leftovers all over again!
