What You Need
3 cloves garlic (or more depending what you want the sauce for), diced
1 onion diced
2 punnets cherry tomatoes
1.5 cups stock of choice
Chef's Choice Italian herbs- a couple of teaspoons to taste (fresh herbs can also be used.)
salt and pepper to taste
Pan fry chopped garlic, onion and cherry tomatoes in a glug of olive oil.
Add stock to the pan. cook at a simmer til the tomatoes break down. Season to taste with the Italian herbs, salt and pepper. Leave chunky or blend smooth as desired.
If you want to try a creamy pasta base like this one - you can add cream to the pan and warm through.
