You ate out, skipped lunch, ate a sandwich with the kids… etc. That beautiful bag of spinach looks at you with a forlorn sigh, looking a bit wilted and defeated. We meant well…
It’s ok! You can still show that spinach the love it deserves! With this handy recipe, you can add an impressive, beautiful looking, tasty, and adorable side dish to any meal, adding a cool Asian twist- totally upping your cooking cred! Make it tonight!
Serves 4-6 as a side
What you need –
500g baby spinach
1 tsp salt, to add to the water
6 cups water
1 tbs shallots, finely chopped
1 tsp minced garlic
1/2 tsp salt or to taste
1 tbs sesame seeds (pan roasted is better but not necessary)
2 tbsp sesame oil
Bring the water to the boil, add the salt, and blanche for 10- 30 sec. just a quick dunk really.
Drain and rinse the spinach under cold water for a minute.
Squeeze out excess water.
Add all seasoning ingredients. If you have any fun or spicy sushi topping – feel free to sprinkle it on as well.
