Japanese Soy Butter Mushrooms



Looking for a satisfying new winter warmer? This Japanese inspired mushroom medley in savoury soy infused butter will tickle your tastebuds.


Soy butter is rich and decadent - perfect for winter meals and oh so delicious when absorbed by the mushrooms!


What you need:


  • 1 cup of brown mushrooms, thickly sliced

  • 1 cup of shiitake mushrooms, thickly sliced

  • 1 cup of shiimeji mushrooms, stalks separated

  • 2 cloves garlic, minced

  • Glug of olive oil

  • 2 tbs butter

  • 3 tbs soy sauce

  • 1 tbs sesame oil

  • Salt and pepper to taste

  • Shallots, finely sliced, to garnish


Method:

  1. Heat a glug of oil in a fry pan until shimmering.

  2. Pop in all of your mushrooms and stir.

  3. Add garlic and keep cooking until fragrant (a couple of minutes).

  4. Add butter, soy sauce and sesame oil. Season ti taste.


Serve immediately as is, or on top of rice. This is also a delicious side dish alongside a piece of white fish. Garnish with shallots to serve.
