Healthier Devilled Eggs
Easter means Eggs Eggs Eggs! Free Range Organic eggs- like from our app, chocolate eggs, and coloured eggs! To help with entertaining ideas- here is another festive, protein-filled, 'healthier' crowd-pleaser.
The ultimate finger food, traditional devilled eggs use mayonnaise. If you are looking for an alternative- how about greek yogurt to create that satisfying creamy tang! Sprinkle with a little paprika and chives for a colourful eye pleasing finish. Voila'- easy healthier entertaining snack at your fingertips!
What you need:
½ cup plain whole-milk Greek yogurt
1 tablespoon mustard
¼ teaspoon Chef's Choice sea salt
⅛ teaspoon Chef's Choice black pepper
¼ teaspoon Chef's Choice smoked paprika plus more for topping
a few chives for topping
⅛ teaspoon cayenne pepper (optional)
What to Do:
Cut each egg in half lengthwise. Remove the yolks into a small bowl. Arrange the whites on a serving plate.
Use a fork to mash the egg yolks.
To the egg yolks, add Greek yogurt, mustard, sea salt, black pepper, smoked paprika and cayenne pepper if using.
Mix well, until smooth. If the mixture seems too dry, add more Greek yogurt.
Spoon the mixture back into the egg whites. Sprinkle smoked paprika and cut a few chives on top. Serve immediately, or refrigerate for serving later. Can be made the night before- just keep the yolk mixture and egg whites seperate until the day of serving. Will keep in the fridge - assembled- for a few hours.
