Dill and Garlic Baked Sweet Potato Chips

Well now that we know how to make an awesome aioli, here is a fun and easy recipe to go with it! Making your own chips has many rewards, you can make them any way you want, you can add any seasoning you like and best of all- you know exactly what is in them- no artificial flavours or weird fake colours- just real whole food ingredients.

Once they crisp up- how about a quick dip in some of our Lemony Aioli from earlier in the week!

What You Need:

  • 1Kg sweet potatoes or other potato of choice (or even a mixture)

  • 1/3 cup olive oil

  • 1 Tbsp dried dill

  • 1 tsp garlic powder (or 2 cloves minced garlic)

  • salt and pepper to taste

What to Do:

  1. Preheat oven to 400 F.

  2. Line 2 large baking sheets with parchment paper and set aside.

  3. Combine olive oil, salt, black pepper, and dried rosemary in a large mixing bowl.

  4. Peel the sweet potatoes, and use a mandolin slicer to cut the sweet potatoes into thin rounds. (a mandolin or similar really does help to keep the slices a similar thickness- ensuring even cooking time if you have one or can borrow one)

  5. Add sliced potatoes to the bowl and toss to coat.

  6. Spread potato slices into a single layer on the baking sheets, and leave space around them.

  7. Bake about 10-12 minutes on each side turning them once, until golden. Remove from the oven and cool the sweet potato chips on cooling racks for about 5-10 minutes. They will crisp up a little more as they cool.
