Chocolate Avocado Mousse



This mousse variation was designed to impress! It tastes unbelievably creamy and velvety. It doesn’t involve a series of steps that need to be perfectly executed and even better-can be done in a single bowl. Dress it up a little bit to impress guests with fresh berries and shredded coconut or eat straight out of the bowl!


Makes 4 generous servings


What you need:


  • Flesh of 2 ripe avocados

  • ¼ cup regular cocoa powder

  • ¼ cup melted dark chocolate chips (substitute Dutch cocoa powder for a lower fat and lower sugar version)

  • ¼ cup milk of choice

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • 2 tbs honey (or any other sweetener of choice)


For serving (optional)


  • Punnet of raspberries (or any berry of choice)

  • A couple tablespoons of shredded coconut


Method:


  1. If using, place the chocolate chips into a heat proof bowl and melt over a water bath. Once melted, set aside and let cool.

  2. Halve and pit the avocados, then scoop out the flesh into a food processor. Add all other ingredients and blend until very smooth and creamy. Scrape down the bowl as needed and blend again. Taste and add more honey if required. You can serve immediately or if you prefer a thicker consistency, refrigerate for at least 2 hours or overnight.

  3. Serve topped with berries and shredded coconut.
