Sandwiches and sushi - two tried and tested lunchbox staples that are on every mum’s repertoire! So if we combine them both...would that make you a supermum? These little lunchbox treats are sure to please. They are a little different from the norm but use familiar flavours.
We are sure that these are going to be an absolute hit with the kids!
Not just for kids- add a little garlic and black pepper to the sauce and you have an adorable addition to your lunch time entertaining platter!
(Makes enough for 4 lunchboxes, and you’ll have extra filling for another day)
What you need:
1 large chicken breast, poached and shredded (recipe above)
1 nori sheet
8 slices wholemeal grain bread, crusts removed
2 tbs butter
2 tbs natural yoghurt
1 tbs chives, finely chopped
1 medium avocado, flesh cut into long slices
1 Lebanese cucumber, cut into long slices
Salt and pepper
Method:
Cut nori into 4 long strips.
Place bread slices on a flat surface and flatten gently with a rolling pin. Spread with butter.
Combine yoghurt and chives in a bowl, and season. Spread bread slices evenly with a thin layer of the yoghurt mixture.
Stack chicken, avocado and cucumber on bread slices on edge closest to you.
Roll up bread slices to enclose filling.
Wrap 1 nori strip around each sandwich and secure ends with a little water.
Cut as desired and pack.
If you have extra filling, store and use within the next 2 days.
