Broccolini and Pesto Chicken Pasta



With Broccolini gloriously in season (and on special), here is a super simple mid-week crowd pleasing meal. Even better, you can add chilli, additional lemon or even a bit more garlic to suit your tastes.



What You Need:

  • 1/2 cup Olive Oil

  • 1 bunch of broccolini

  • 1 large chicken breast, (or 2 small ones) thinly sliced

  • 3 -4 Tbsp pesto of choice

  • 3 garlic cloves, diced

  • 2 large shallots, diced

  • Salt and pepper to taste

  • Lemon wedge and/or parmesan cheese to serve

  • 2 serves pasta of choice


What To Do:

  1. Marinate chicken in 2-3 Tbs pesto for at least an hour prior to cooking.

  2. Prepare pasta as per packet instructions- set aside and keep warm.

  3. Place a glug of the olive oil, in frying pan and add chicken pieces. Cook over medium high heat until cooked through. Remove chicken and set aside.

  4. Add a bit more oil to pan if needed. Add shallots, sautéing for 2 minutes. Add garlic and broccolini to pan, sautéing another 2 minutes, stirring occasionally.

  5. Add chicken, additional pesto and pasta back to pan, mixing gently until warmed through. Serve with a slice of lemon and a sprinkle of parmesan.
